Marcus met with his fantasy football group this past weekend for their annual draft. At the end of the night, Marcus made a strawberry pie for his buddies. Random much? Yes, but he says the pie was very well received!
If you want to make the pie yourself, here's the recipe!
Ingredients:
For the crust:
1 1/3 cups of graham cracker crumbs
3 tablespoons sugar
6 tablespoons butter, melted
For the filling:
1 quart fresh strawberries, hulled and quartered
3/4 cup sugar (I usually cut this in half)
3 tablespoons cornstarch
3/4 cup cranberry juice
Directions:
For the crust:
1. Preheat oven to 350
2. Mix graham cracker crumbs, butter, and sugar in a medium bowl until well combined. Press the mixture into a 9-inch pie pan. Bake for 10-12 minutes or until the crust is golden brown and the center is firm. Let it cool completely before filling.
For the filling:
1. Combine half the strawberries and sugar in a medium bowl. Mash with a potato masher or fork until mostly smooth. Stir in the remaining berries and let stand for 10 minutes.
2. Combine the strawberry mixture, cornstarch, and cranberry juice in a medium saucepan and let cook until it thickens and bubbles.
Pour the mixture into the cool crust and chill in the 'fridge for four hours.
