The Grub Up: Make Perfect Pizza Dough With Celebrity Chef Derek Corsino!

If you've ever tried to do pizza at home, you know the ingredients are simple, but the technique can be challenging. We're joined on the podcast this week by Celebrity Pastry Chef and Four-Time Food Network competitor Derek Corsino and he's going to walk us through the perfect pizza dough! Neapolitan Pizza Dough By Derek Corsino

Yield: 4 small pizzas or two medium Ingredients

Ingredients:

3 ¾ All purpose Flour
3 ¾ c Water
1 ⅓ c Honey
2 t Salt
2 ½ t Yeast, instant
¾ t Cooking Spray As needed

Method:

1. Combine all in a medium/large bowl

2. Stir together with a wooden spoon until they come together as a ball

3. Knead in the bowl until the bowl is clean on the sides

4. Remove from the bowl and knead on a sturdy table for 7-8 minutes

5. Dough should be smooth and elastic, then divide in quarters (4 pieces)

6. Spray with oil and shape round

7. Place on an oiled sheet tray and wrap all around with plastic sealing the dough in so no air can get in

8. Proofing a. In using today: Let rise until doubled about 1 hour (less desirable) b. If using in the next 3 days, refrigerate well covered c. If using later: Freeze individually in a freezer bag that is lightly oiled for up to 3 months

9. Baking: a. Heat a pizza stone or steel in your oven set at its maximum temperature for 25-30 minutes b. Build your pizza with desired sauce and toppings on the back of a peel or sheet pan with cornmeal sprinkled on to prevent sticking i. For a margarita, brush dough with olive oil, add ½ c of tomato sauce, ½ cup of mozzarella cheese and a sprinkle of parmesan cheese c. Slide onto the pizza stone/steel and let bake until the crust starts to brown, cheese browns and sauce bubbles slightly. d. Remove, let cool slightly. Add additional toppings as desired such as greens e. Cut into 6 slices and eat.
